13 Summer Cocktails That Feel Like Vacation in a Glass

I was scrolling through vacation photos the other day when it hit me – that perfect poolside drink moment where everything just felt right. You know the one? The sun is setting, you’ve got that perfect cocktail in your hand, and for a few minutes, the world feels absolutely perfect.

That’s when I realized I didn’t need to wait for my next beach trip to recreate that feeling. Some of my favorite summer memories have happened right in my own backyard with the right drink and good company.

These cocktails aren’t just recipes – they’re little escapes you can make at home. Most of them use ingredients you can grab at any grocery store, and none of them require fancy bartending skills. I’ve served these at pool parties, girls’ nights, and lazy Sunday afternoons, and they never fail to transport everyone to that vacation state of mind.

1. Classic Piña Colada

This is pure vacation magic in a glass!

You really can’t go wrong with the classic combo of rum, coconut cream, and pineapple juice. I like to use Coco López cream of coconut because it’s super creamy, and always fresh pineapple juice when I can find it.

Blend 2 oz white rum, 1 oz coconut cream, 1 oz heavy cream, 6 oz pineapple juice, and 2 cups ice until smooth. The key is getting that perfect slushy texture – not too thick, not too thin.

Total Wine has great rum selections, and you can find coconut cream at most grocery stores now. Serve it in a hurricane glass with a pineapple wedge and you’re instantly transported to the Caribbean!

2. Watermelon Mint Mojito

This drink screams summer refreshment!

Muddle a handful of fresh mint leaves with some cubed watermelon in the bottom of your glass. Add 2 oz white rum, 1 oz simple syrup, and the juice of half a lime. Top with club soda and more ice.

I love buying pre-cut watermelon from Costco to make this easier. The combination of sweet watermelon and fresh mint is absolutely perfect on hot days.

3. Frozen Strawberry Daiquiri

Simple, classic, and absolutely delicious.

Blend 2 oz white rum, 1 oz lime juice, 1 oz simple syrup, 1 cup frozen strawberries, and 1 cup ice until smooth. The frozen strawberries keep it thick and give it that beautiful pink color.

I always keep bags of frozen strawberries from Trader Joe’s in my freezer just for this drink. You can make a whole pitcher for parties by just multiplying the recipe.

It’s like drinking a strawberry cloud!

4. Cucumber Gin Fizz

This one feels so fancy but is actually super easy.

Muddle 3-4 cucumber slices in your shaker, add 2 oz gin, 1 oz fresh lime juice, and 1 oz simple syrup. Shake with ice, strain into a glass, and top with sparkling water.

The cucumber makes it incredibly refreshing, and I love using Hendrick’s gin for this because it already has those botanical cucumber notes. Any gin works though!

Garnish with a cucumber ribbon and you’ll feel like you’re at a fancy resort spa!

5. Mango Margarita

This tropical twist on a classic never gets old.

Blend 2 oz silver tequila, 1 oz triple sec, 1 oz lime juice, 1/2 cup frozen mango chunks, and 1 cup ice. I like to rim the glass with lime juice and tajín for that perfect sweet-spicy combo.

Trader Joe’s frozen mango chunks are perfect for this, and you can find tajín at most grocery stores now. The combination of sweet mango and tart lime is absolutely perfect.

It’s like a tropical vacation and Mexican beach day rolled into one!

6. Lavender Lemonade Spritz

This drink is pure summer elegance.

Make lavender simple syrup by boiling equal parts water and sugar with a tablespoon of dried lavender, then strain. Mix 1 oz vodka, 2 oz fresh lemon juice, 1 oz lavender syrup, and top with prosecco.

You can find dried lavender at Whole Foods or order it online. The floral notes make this feel so sophisticated and refreshing.

This tastes like a tropical island party.

I love using Malibu coconut rum for this, and the grenadine gives it that beautiful sunset color. Garnish with a cherry and orange slice for the full tiki effect.

This combines two of my favorite summer drinks!

Mix a bottle of prosecco with 1 cup peach purée, 1/2 cup peach schnapps, sliced peaches, and fresh mint. Let it chill for at least an hour so all the flavors meld together.

I make the peach purée by blending fresh peaches with a little simple syrup. This is perfect for entertaining because you can make a huge batch and it looks gorgeous in a pitcher.

The key is tasting as you go – some jalapeños are spicier than others. I like to rim the glass with chili-lime salt for extra flavor.

This Instagram-famous drink is actually amazing.

Freeze a bottle of rosé in ice cube trays overnight, then blend the frozen wine cubes with 1/4 cup simple syrup and 2 oz fresh lemon juice until slushy.

Any rosé works, but I love using something light and fruity. The texture is like a sophisticated slushie, and the pink color is absolutely gorgeous.

It’s fancy enough for a garden party but fun enough for a pool day!

This drink is pure summer sophistication.

Muddle 6-8 blackberries and 4-5 basil leaves in your shaker. Add 2 oz bourbon, 1 oz lemon juice, and 3/4 oz simple syrup. Shake with ice and strain over fresh ice.

This New Orleans classic brings the party wherever you are.

Mix 1 oz light rum, 1 oz dark rum, 2 oz passion fruit juice, 1 oz lemon juice, and 1/2 oz simple syrup. Shake with ice and serve in a hurricane glass.

If you can’t find passion fruit juice, pineapple juice works great too. The combination of two rums gives it that perfect tropical punch.
